Soft Baked Lemon Cookies
Coooookies. Everyone loves them. And, seeing as it’s been a good while since I last made some, it was clearly time to whip up a new batch. The Cookies are thick, soft and chewy and they will keep well for up to 5 days if you store them in an airtight container or even a plastic bag. They’re perfect for a morning tea or a sweet treat at anytime.
What you will need: 10 Tbsp butter (1/2 cup [1 stick] plus 2 Tbsp), 1 cup sugar, zest of 2 lemons (about 1 Tbsp lemon zest), 1 large egg, 1 large egg yolk, 2 Tbsp fresh lemon juice (about ½ lemon), 1½ tsp pure lemon extract, 5 drops yellow food coloring, 2 cups all-purpose flour, 2 tsp baking powder, ½ tsp salt and ¼ cup powdered sugar.
