Creamy Green Chili Enchiladas

Between work, this blog, vacations, birthdays and just life in general the spring days have become increasingly busier by the minute. I just don’t have the time or patience lately to crank out complex meals that take any longer than 30 or 40 minutes to prepare.
Mexican food = YUM!! It’s easy to put together and ridiculously yummy. The sauce is thick and rich and not at all spicy. Cheesy chicken enchiladas in a creamy white sauce, what’s not to love? My whole family gets excited when these white chicken enchiladas are on the menu! This is probably one of our all-time favorite enchilada recipes.
