Delicious Zucchini Walnut Pancakes
Pancakes are a favourite at our house. My husband loves them the traditional way but I love to spice them up a bit by trying creative variations. One of my favourites is zucchini-walnut pancakes.
The combination of these pancakes adds a huge kick of healthiness, but it also cuts the over-the-top sweet factor that often accompanies a more traditional buttermilk recipe.

***Note: If you have never baked with almond flour before it is a great substitute to regular flour. For this recipe the grainy taste is the perfect compliment to the zucchini and walnuts but the choice is up to you!
