Homemade Roasted Root Vegetable Soup
Root vegetables are dug up from the ground, and are packed with earthly goodness! My favorite way to enjoy these types of veggies is soup! I love soup, especially when it’s homemade like this recipe from theviewfromgreatisland.com. All of those hearty root vegetables, and then soak all that goodness up into a homemade, thick, crusty, chunk of bread! Winner! Excuse me while I drool… This would make an awesome Thanksgiving treat too! Winter will be sneaking up soon and this will warm you right up!
Vegetables such as carrots, sweet potatoes, swede and turnips contain significant amounts of vitamin C and beta-carotene, which help to clean the blood and prevent high blood pressure, heart disease and stroke. There are many health benefits to eating root vegetables. They will not only improve your physical well being, but improve your mental health as well. This is due to their high amounts of antioxidants which help to remove harmful free radicals and toxins from the body. So the moto of the story is? Eat your veggies!
