Lamb Ragu with Papardelle

WHAT YOU WILL NEED
- 3-4 Tbsp olive oil
- 1/2 white onion
- 2 large shallots
- 2 cloves garlic
- 1 carrot
- 1 stalk celery
- 1 lb ground lamb
- 1/2 cup good red wine
- 1 8oz can tomato sauce
- 3-4 Tbsp tomato paste
- 2 bay leaves
- small bundle of fresh thyme sprigs, plus more for serving
- 1 -2 tsp balsamic vinegar
- salt and black pepper
- Parmigiano Reggiano cheese for grating
- 1 lb papardelle pasta
