Mini Lemon Scones

Light and flaky. these Mini Lemon Scones are perfect along with an espresso or a glass of ice cold milk! These are easy to make for breakfast, brunch, morning snack….. call it what you want. I love it. I especially love it when I get to enjoy breakfast with a homemade baked good.
What you will need: 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, 6 tablespoons cold unsalted butter, diced, 1 box (3.4 ounces) instant lemon pudding mix, 1/2 cup International Delight Vanilla or Sweet Cream Coffee Creamer, 1 large egg, 1 teaspoon vanilla extract and Zest from one large lemon. For the glaze: 1/2 cup powdered sugar, Pinch salt and 1-2 tablespoons fresh lemon juice.
