Parmesan Roasted Carrots
Hands down, my favorite way to cook veggies is to roast them in the oven. There is nothing easier than tossing veggies with olive oil and spices and baking them in the oven. Forget steaming! Roasting brings the best in veggies!
I adore roasted vegetables any time of year, but they seem to taste especially good in the cooler months. And one of my new favorite ways to get my fix is by eating these Parmesan Roasted Carrots. What you will need: butter, garlic, parmesan cheese and parsley. Tossing veggies with melted butter is not necessary. Sometimes roasting veggies can cause them to have slightly dry skin (they are still soft and moist inside). Adding butter adds flavor and improves texture. They’re a breeze to make and are sure to be gobbled up by the entire family!
