Strawberry Rhubarb Cobbler with Honey Butter Biscuits
This starts with combining your rhubarb, strawberries, sugar, salt, and lemon zest in a cast iron skillet (or something that’s also oven safe– perhaps a Dutch oven.) Then you make your biscuit dough and drop the biscuits onto the fruit. Sprinkle on a little coarse sugar and bake away. Once it’s finished, serve it with some of the delicious honey butter and some whipped cream or vanilla ice cream. Or both, no judgment here!
But what’s even better, this recipe is versatile. If you don’t care for strawberries or even have them on hand you can swap them out for something else like cherries. This recipe allows you the freedom to mix and match fruit choices to find a pair that fits your liking. Enjoy!
