Mexican food = YUM!! It’s easy to put together and ridiculously yummy.  The sauce is thick and rich and not at all spicy. Cheesy Chicken Enchiladas in a creamy white sauce, what’s not to love? My whole family gets excited when these white chicken enchiladas are on the menu! This is probably one of our all-time favorite enchilada recipes.

A great holiday tip: you can make these enchiladas with leftover Thanksgiving turkey. Absolutely divine!
